Uva Nestum Winery is located 1.5 km away from the town of Gotse Delchev on the road to the villages of Leshten and Kovatchevitsa. A part of The Uva Nestum Wine & SPA Complex, the boutique winery boasts its own 25 decares of naturally farmed vineyards, where Syrah, Rubin, Cabernet Franc, Merlot, Cabernet Sauvignon, Tamianka and Muscat Ottonel grape varieties are grown with due care and lots of love. To make Chardonnay, Sauvignon Blanc, Aligote and Mavrud wines, the Winery trusts selected wine growers who also strive to produce a grape quality for making well-balanced harmonious wines, from regions, where these wine varieties can fully develop their wine potential and ripeness.

The team of boutique winery Uva Nestum places extraordinary importance on the quality of wine production.

The whole process, starting from picking the grapes manually and ending with the wine maturity, evolves under a fully closed cycle of production in the winery itself and on the territory of the complex.

The favorable natural conditions of the region – climate and soils, the due care in cultivation, the control exercised in the process of yield, the investments in contemporary technology, the professional experience and the precision at every step of the production cycle are all prerequisites for the creation of unique, unforgettable and remarkable wines.

Uva Nestum wines are made from our own 25 decares of naturally farmed vineyards, planted to the varieties that we think are best suited to the region of Gotse Delchev’s unique microclimate:

TERROIR

TERROIR


Being a part of the South – West Viticultural  Region, the lands belonging to the town of Gotze Delchev are extremely suitable for growing grapevines, especially for these, which produce grapes for making red wine. The average altitude above sea – level of the region is about 500 m. The average annual temperature is 12.2°C, and in July, the average temperature is 21 – 22°C. The 24 – hour temperature regime is relatively stable.

Extremely favourable is the fact that in the lands around Gotze Delchev, the brown and the cinnamon forest soils prevail. The brown forest soils are sandy – clay, which gives the opportunity to grow grapes of very good quality.

An additional advantage of the terroir is also the fact that the temperature sums are relatively high (over 3500° during the period of vegetation), as well as the fact, that the region around Gotze Delchev is one of the richest in water regions in Bulgaria.It lies completely in the Mesta River Valley. The winter here is milder and the danger for the vines to be damaged by the frost is smaller.

QUALITY GRAPES


To guarantee the quality of our grapes, we do all the viticulture work by hand, at the most appropriate time. We take daily control, with particular focus on pruning and attention to development of the fruit. Green harvesting twice in summer is an essential step to help manage yield and achieve the optimal crop yields and grape quality.

WINE TECHNIQUES

WINE TECHNIQUES


Different wine techniques are used for the different wines. For our high grade wines - Uva Nestum Rubin & Merlot and Uva Nestum Cabernet & Merlot - we implement cold maceration for 6-8 days, followed by alcoholic fermentation for about 7-10 days. With the exception of Uva Nestum Shirtó, all red wines mature in first-class French oak barrels for 6-14 months.
